It certainly can be frustrating.
You have to be quite creative and resourceful to find that “in” to demonstrate your ability.
In my own life I have pondered my options since I have thought about going back to university. I thought to myself that I’m interested in the mind, so maybe I should do a psychology degree. I also make music so I thought maybe I should study music.
Music is easy to find another way with because no one cares what degree you have if people enjoy your music because you can demonstrate your ability.
As for my interest in the mind and things like spirituality or philosophy, I thought I could study counselling or psychology, but it wasn’t quite what I was looking for so instead I thought of other ways. One being Medium. A great way to demonstrate your ability to an audience.
Copy editing would be difficult. People don’t trawl the internet for good copy, specifically for the enjoyment of the level of editing (the average person, I mean). But music, and articles about life, people do look for (in my case).
Maybe if you have a reputation in writing, that could give you the credit or reputation you need for copy editing? For me, I plan to use my own music to advertise my sound production ability to perhaps mix and master other people’s music. Hopefully in your case it could work like this, or maybe you are already going down that avenue.
